La Chata Restaurant is a vibrant Mexican eatery located in Green Bay, WI, serving up authentic flavors since 2024. Our Story
La Chata Restaurant is a vibrant new addition to the downtown Green Bay dining scene, offering authentic Mexican cuisine inspired by the rich culinary traditions of Guadalajara. Established in 2024 by Nuno Delgadillo, La Chata is more than just a restaurant—it’s the realization of a dream that began nearly a decade ago. Delgadillo moved to Green Bay ten years ago from Jalisco, Mexico. In 2015, she began selling tortas, a traditional Mexican sandwich, at Taqueria Don Pancho. Through years of hard work and determination, she saved enough to purchase a food truck in 2020, naming it La Chata. The food truck quickly gained popularity, particularly for its flavorful tortas ahogadas—sandwiches filled with slow-cooked pork or beef and “drowned” in a rich tomato sauce. In 2024, La Chata expanded into a full-service restaurant across from Whitney Park.
La Chata Restaurant is unique in its approach to service and flavor. The restaurant operates in an a la carte and buffet-style format, giving customers the flexibility to build their meal exactly how they like it. Dishes are made to order using the freshest ingredients, ensuring quality and flavor in every bite. The menu is rooted in traditional recipes from Guadalajara, with an ever-evolving buffet that shifts throughout the day to offer something for every craving. From 7 a.m. to noon, customers can enjoy a breakfast and brunch buffet that includes both Mexican and American favorites such as omelets, skillets, and pancakes. As the day progresses, the buffet transitions to showcase a variety of Mexican staples including tacos, burritos, fajitas, and the beloved tortas ahogadas—available at all times.
La Chata is more than a restaurant; it’s a community gathering place with multiple ways to enjoy their offerings. Customers can dine in, carry out, or place online orders through DoorDash and Toast for added convenience. The restaurant also offers catering services, making it a great choice for events and special gatherings. As the team continues to navigate their soft opening phase, they are actively adjusting hours based on customer demand and staffing availability. Building a strong, reliable team is a top priority for Delgadillo as she works to extend business hours and better serve her growing customer base.
